Finally had a chance to listen to the episode and raise a wee dram to Her Majesty with you (wee because the alarms will go off in just over 7 hours), thank you for dedicating this episode to her and the connections between the Royal Family and the whisky industry. I had not previously heard of the STR method that the Cotswolds Distillery uses, seems like a smart way to avoid cutting down too many trees (a threat apparently facing Bourbon) - as long as the whisky still tastes great, why not!
